Ingredients

  • 2 cucumber large
  • 3 tomatoes ripe
  • 1 avocado optional
  • ½ red onion
  • ½ cup pitted olives
  • 1 tbsp. cilantro or parsley

For the dressing

  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. red wine vinegar
  • 1 tsp. salt
  • ½ tsp. sugar optional
  • 1 tsp. black pepper

Optional

  • 2 tbsp. feta cheese vegan optional

Instructions

  • Take 2 cucumbers and dice them into cubes.
  • I left the peel on as it these were Persian cucumbers.
  • Take off the peel if it is tough.
  • Similarly dice the tomatoes into cubes.
  • Slice half red onion and keep aside.
  • In a large bowl, mix together cucumber cubes, tomato cubes and onion slices.
  • Add salt and pepper and mix well.
  • Add extra virgin olive oil and red wine vinegar.
  • Mix well. Add pitted olives.
  • If adding feta cheese, crumble and add.
  • Chill in the fridge and serve. Your delicious Mediterranean cucumber tomato salad is ready to serve.

Notes

1. Use only fresh green cucumber and ripe tomatoes. 2. You can use any herbs that you like. 3. Marinating the salad in the dressing makes it very flavourful. 4. Serve the salad chilled. 5. You can store leftovers in the fridge for a day but not too long as it does taste best fresh. 6. You can also use a tbsp. of chopped fresh herbs like cilantro or parsley. 7. You could use balsamic vinegar or apple cider vinegar in place of red wine vinegar. They taste equally good.
