This is a fresh corn salsa recipe that is super quick and easy to make. It is fresh and nutritious and works as a nice and filling salad or side option.

Ingredients

  • 2 corn ears grilled
  • ¼ onion finely chopped
  • 2 jalapenos or green chillies finely chopped
  • 2 tbsp. cilantro or coriander leaves finely chopped
  • salt to taste
  • 1 tsp. ground black pepper
  • 2 lemon juice
  • ½ avocado finely chopped optional
  • some cherry tomatoes halved optional

Instructions

  • Grilled corn does taste better. You could grill it on stove top or a grill. You could even steam the corn in the microwave if you so prefer.
  • Mix all the ingredients well. Add salt and pepper to taste along with lemon juice.
  • Serve immediately.

Notes

Since there is lemon juice in this recipe, the avocado stays good.
In case you are not planning to immediately consume this corn salsa, you can leave out the salt and pepper and add it just before serving.
You can leave out avocado or cherry tomatoes as per your choice.
You can choose to use less or more onion, as per your taste.
