Ingredients

  • 6 eggs
  • ¾ cup cheddar cheese
  • 2 tbsp. spinach
  • 1 green onion or scallion chopped
  • 4 button mushrooms sliced
  • ½ tsp. Pepper
  • ¼ tsp. Salt
  • Olive oil for spraying or brushing

Instructions

  • Assemble all the ingredients and keep together.
  • I have used 6 medium eggs that are at room temperature in this recipe. Break the eggs in a bowl.
  • Chop spinach, green onion and mushrooms and keep aside. Keep grated cheddar in another bowl.
  • Take salt and pepper in a bowl.
  • Beat the eggs well till they are fluffy.
  • Add salt and pepper and mix well.
  • Add cheese and the veggies you are using and ensure they are mixed into the egg mixture.
  • I have not preheated the air fryer for this recipe as I find it cumbersome to put in the cake tin or parchment paper dish in a hot air fryer.
  • Place the frittata mix in a parchment dish or cake tin and then carefully put it inside air fryer basket.
  • Close the air fryer. Air fry at 360F or 180C for 12 - 17 minutes till the frittata is cooked.
  • To check if it is cooked, poke with a knife in the centre of the frittata. If your knife comes out clean then the frittata is cooked.
  • Take it out and using a spatula, carefully slide it out onto a plate. Cut and serve.
  • Your delicious vegetable and spinach frittata done in air fryer is ready. It is really delicious and done in no time. Enjoy.

Notes

1. Do not preheat the air fryer. It is difficult to handle the cake pan or parchment paper dish in a hot air fryer basket.
2. This recipe is for 6 eggs but you can easily halve it or make it for 4 eggs.
3. If using a cake tin or a silicone cake mould for air fryer, 7” one works fine. Line your cake tin with parchment paper and grease it lightly.
4. The more eggs you use, the more will be the thickness of the frittata and the more time it will take to cook.
5. If your frittata browns too much on top, you can cover the top with a foil to prevent this from happening.
6. This frittata can be stored for 2-3 days in the fridge. Reheat in air fryer before serving.
To check if the frittata is done, insert a knife in the middle. It should come out clean.
