Equipment

Ingredients

  • 1.5 cups sweet corn
  • 2 tbsp. cornstarch or cornflour

Spices

  • ½ tsp. Salt
  • 1 tsp. Garlic powder
  • ½ tsp. Pepper
  • ½ tsp. Chilli powder or cayenne
  • 1 tbsp. lemon juice
  • 1 tsp. Oil

Garnish

  • 1 chopped onion
  • 1 tbsp. cilantro chopped
  • Salt and pepper to taste
  • Chaat masala optional

Instructions

  • If using frozen corn, immerse in hot water for about 5 minutes. Drain and use.
  • Assemble together the spices, salt and cornstarch along with lemon juice and oil.
  • I add the spices and salt first and mix with the corn. Then I add cornstarch and mix well to coat.
  • Finally add lemon juice and oil and mix well further.

Air frying Instructions

  • Preheat air fryer at 360F or 180C for 5 minutes.
  • Lay the marinated sweet corn in one layer and air fry for about 10-12 minutes at 180C or 360F till crunchy. Shake the basket 2-3 times during cooking.

Deep frying

  • Heat oil in a wok or pan till it is medium hot. Carefully fry the marinated corn pellets for about 1-2 minutes till crispy and done.
  • Take out and serve hot after garnishing.
  • Take out the crispy corn and toss with some more lemon juice, salt and pepper.
  • Also add if you some chopped onion and cilantro. Mix well and serve hot. Those in India would love this as Barbeque Nation style crispy corn.
  • For the Indian touch, garnish with chaat masala, salt, chopped onion, chopped cilantro and some finely chopped chilli.

Notes

1. Use cornstarch for a nice crunch. I used 2 tbsp. for 1.5 cups of corn. A lot of it sheds off so you aren’t consuming that much.
2. After air frying, taste the corn. Then toss with salt, pepper, lemon juice and chopped onion and cilantro.
Adding chopped onion provides a nice crunch to the crunchy corn.
3. This will not keep as the crunch is lost. Best to consume it fresh.
4. You can make a zero-oil version by doing away with oil and just using a bit of water in its place. Make sure that the cornstarch coats the corn.
5. You can adjust the spices as per taste.
