Tasty Pumpkin Pasta
Make the pumpkin puree:
Chop pumpkin into pieces. Boil with little water till creamy. Blend. You could also bake or air fry pumpkin slices or wedges then blend to make a creamy pumpkin puree.
Make the pasta and sauce:
Prepare pasta as per pack instructions. Heat olive oil and lightly saute chopped onion and garlic. Add 1 cup tomato puree and 1 cup pumpkin puree. Cook till sauce thickens.
Assemble pumpkin pasta:
Add milk along with Ioregano, chilli flakes, pumpkin spice and salt.
Toss cooked spaghetti. Taste and adjust spices.
Pumpkin pasta is ready to serve
Garnish with grated parmesan and black pepper. Serve hot.
