Make the pumpkin puree: Chop pumpkin into pieces. Boil with little water till creamy. Blend. You could also bake or air fry pumpkin slices or wedges then blend to make a creamy pumpkin puree.
Make the pasta and sauce:Prepare pasta as per pack instructions. Heat olive oil and lightly saute chopped onion and garlic. Add 1 cup tomato puree and 1 cup pumpkin puree. Cook till sauce thickens.
