Vrat ke Aloo for Navratri

This is a delicious and simple vrat wale aloo curry recipe that is perfect vrat recipe for festivals like Navratri, Janmashtami etc. It is a very tasty curry to have even otherwise.

  • Pressure cooker for boiling potatoes

Ingredients

  • 2 cup potatoes boiled and chopped
  • 1 tsp. cumin seeds
  • 1 green chilli finely chopped
  • 1 tsp. ghee or clarified butter
  • 1 tsp. red chilli powder optional
  • ½ tsp. roasted cumin powder
  • 1 tsp. cilantro or coriander leaves finely chopped
  • ½ cup curd or yoghurt
  • 1 tsp. ginger grated
  • Pink salt or black salt to taste

Instructions

  • Heat ghee in a pan.
  • Add cumin seeds and allow to sputter. Takes about a minute.
  • Now add grated ginger and chopped green chilli and fry for 30 seconds.
  • Add boiled and cubed potatoes and fry for about 3 minutes on low flame.
  • Now add red chilli powder (optional), cumin powder and pink salt and mix well.
  • Now add half cup whisked curd and mix well.
  • Cook on low flame for about 3-4 minutes. Your gravy will be barely there. Taste and adjust seasoning.
  • Garnish with finely chopped cilantro and serve hot. Your tasty vrat ke aloo is ready to serve.

Notes

1. Toasting your boiled potatoes in ghee make them super tasty.
2. If you want more curry, just add some more water or whisked curd, add more seasoning and pink salt.
3. In case, you want to have this recipe without fasting, add normal salt. You may add turmeric powder and garam masala as well.
4. You can make your gravy thicker by mashing some potatoes using the back of your ladle at the end.
5. Serve it hot with rotis or rice.
