Ingredients

  • 3 green tomatoes
  • 1 cup breadcrumbs or ½ cup cornmeal + ½ cup breadcrumbs
  • ½ tsp. Cayenne
  • ½ tsp. Pepper
  • Salt to taste
  • ½ cup buttermilk or use vegan buttermilk (see notes) or 2 eggs
  • ½ cup wholewheat flour

Instructions

  • Wash and dry each tomato. Cut into ¼” to ½” thick round slices. Lightly sprinkle salt on each side and keep aside for 5 minutes.
  • Meanwhile mix together flour, breadcrumbs (or cornmeal and breadcrumbs), cayenne, pepper and salt. Take buttermilk or vegan buttermilk or 2 eggs in another shallow dish.
  • When you are ready to air fry, wipe tomato slices with paper towels.
  • Dip each tomato slice in the buttermilk and then dredge in the breading. Press so that each side is nicely coated.
  • Keep aside.

Air fryer Instructions

  • Preheat air fryer at 360F or 180C for 4 minutes.
  • Lightly brush or spray air fryer basket with oil.
  • Now arrange the breaded green tomatoes on the air fryer basket.
  • Air fry at 360F or 180C for 8-10 minutes till they are golden and crispy on the outside. You can lightly brush each side with oil for a golden appearance midway into air frying.
  • You can also flip the tomatoes midway.
  • Your fried green tomatoes are ready. Serve with a dip of choice or a nice tomato salsa. Enjoy.

Oven Instructions

  • Preheat oven to 400F. Lay breaded tomato slices in one row.
  • Bake for about 20 minutes. You may flip them in the middle. Keep an eye to ensure that the breadcrumbs don't get burned.
Your baked green tomatoes are done.
  • These will stay crisp after cooling down. Air fry them for 2-3 minutes to heat them up. You can also freeze them after air frying.
  • They stay good for up to 2 months.

Notes

1. To make vegan buttermilk take ½ cup plant based milk and add 1 tsp. lemon juice to it. Keep aside for 5 minutes. It starts splitting. Use this as buttermilk.
2. Use firm green tomatoes from your garden or buy them for this recipe. Do not use tomatoes that are starting to turn red, as they become mushy after air frying.
3. Adding salt to the tomatoes brings out their flavour well.
4. You can use 2 eggs in place of buttermilk in case you eat eggs.
5. I have used wholewheat flour in place of all purpose flour here. But you can use regular flour as well.
6. Since I don’t like cornmeal, I have skipped it. But it does provide a nice crunch, and go ahead and use it if you like it. You may also use crushed cornflakes here.
