Air fryer Zucchini No Breading

This air fryer zucchini without breadcrumbs is a super easy vegetable side that is also very delicious. Perfect roasted zucchini is that well cooked and done in no time.

  • Cut zucchini into even bite-sized pieces and set aside. I have cut zucchini into half moon and then halved them further.
  • These are not thin as chips or batons like fries. Though you can do those shapes as well. Time varies depending upon the shape. No need to peel the skin.
  • Mix together garlic powder, pepper powder and salt.
  • Coat the zucchini with the spice mix. Spray with olive oil or add olive oil and mix well.
  • If you are looking for low oil cooking then skip oil and just sprinkle a few drops of water on the zucchini to allow the spices to adhere to it.
  • Preheat air fryer at 390F or 200C for 5 minutes.
  • Put in the cut zucchini with spice mix in the basket. Air fry at 390F for 5-6 minutes till it looks nicely roasted and is cooked.
  • You can shake the basket midway for even cooking. The zucchini pieces shrink slightly on cooking.
  • I did 2 batches of cooking and the second batch took me about a minute less of air frying time.
  • Pretty quick and easy way to make delicious roasted zucchini without breadcrumbs in air fryer.
  • You can make zucchini fries with the same recipe. The cooking time will be more as batons are larger in size.
  • Serve it as a vegetable side and enjoy your healthy treat.

Notes

1. Air frying time will vary if you cut your zucchini into larger pieces or batons for fries.
2. You can add 2 tbsp. grated cheese towards the end of air frying for a cheesier zucchini.
3. You can reduce pepper depending upon how much heat you want. Alternatively you can use cayenne or chilli flakes in its place. Also vary the seasoning by using Italian seasoning, Cajun spice etc.
4. You could use vegetable oil in place of olive oil though I love the nuttier taste of olive oil.
5. For an oil free recipe, sprinkle a few drops of water on zucchini and then apply spice rub so that it adheres well to the zucchini and then air fry.
6. This is a vegan and vegetarian recipe that is very delicious.
7. In case you don’t have garlic powder, you can use very finely minced garlic.
