Ingredients

  • 2 eggs
  • 1 avocado
  • 1 pinch salt
  • tsp. pepper
  • tsp. chilli flakes

Instructions

  • Take an avocado and slice it into half. Remove the pit.
  • If your avocado is small, you can scoop out some more flesh.
  • You must have a big enough cavity to fit one egg.
  • Season the avocado with salt, pepper and red chilli flakes if using.
  • Carefully crack an egg into the hollow so that it fits well and the yolk does not break.
  • Preheat air fryer at 380F or 160C for 5 minutes.
  • Carefully place avocado halves inside the air fryer basket.
  • Be careful that they don’t tip over.
  • If your avocado is very round, you can slightly slice off the bottom to make it stable enough to stand.
  • Air fry for about 8-10 minutes at 380F or 160C till the white is cooked and the yolk is runny.
  • If you like fully cooked yolk (which is what I like) then cook it maybe a minute more.
  • Sprinkle with some salt and pepper along with chilli flakes or chives as per your preference.

Notes

Choose a firm but ripe avocado. A mushy one will get way too mushy on heating.
Use room temperature eggs for even cooking.
Do keep an eye on the temperature as it will vary depending upon the size of the avocado and the model of your air fryer.
Serve it immediately for best taste.
