Equipment

Ingredients

For around 20 medium sized meatballs

  • 1 lb. Chicken mince or about 450 gm.
  • 3 cloves Garlic
  • 1 tsp. Italian seasoning
  • 1 egg lightly beaten
  • 2 tbsp. basil you may use rosemary or parsley too
  • 1 tsp. black pepper
  • 1 tbsp. parmesan
  • 1 egg
  • ½ cup breadcrumbs made with 2 bread slices
  • salt to taste

Instructions

How to make healthy chicken meatballs

  • To make the meatballs, mince together chicken breast with chopped basil, black pepper, salt and chopped garlic.
  • Break the egg in a bowl and beat it lightly. Now add the egg and fresh breadcrumbs to the chicken mince mix and mix well.
  • Form meatballs of the desired size with your hands.

For Skillet or Pan frying Meatballs

  • Heat one tbsp. oil on the skillet and cook the meatballs by moving them around till they are browned.

For Air frying Meatballs

  • Preheat Air fryer to 200 C or 390 F for minutes. Then Air fry for about 10-12 minutes till they are done and lightly browned. Brush/spray your meatballs and the basket with a little oil.
  • I make breadcrumbs by throwing the bread slices in the blender for a couple of minutes.
  • You can shallow fry or deep fry the meatballs in vegetable oil till golden brown before adding to the sauce. I prefer sauteing or air frying.
  • Your chicken meatballs or chicken kofta are done. Enjoy them as a healthy delicious snack or appetiser.
  • Serve with a dip of choice or green chutney.

Notes

1. Make your own chicken mince or choose store bought.
2. My ingredients are Italian style that include Italian seasoning. For chicken kofta, use garam masala instead along with red chilli powder. You may also use 2 tsp. Ginger garlic paste in place of only garlic for an Indian touch.
3. You can also use one finely chopped onion for your kofta.
4. In this recipe I used chicken breasts for making the mince. You can also use the darker leg meat.
You can vary the herbs and spices used as per your liking. Parsley, fresh basil or fresh cilantro work well.
5. Preheat the air fryer before air frying meatballs. That way the meatballs cook better.
6. Use a meat thermometer and check the internal temperature. Once it reaches 165F, your chicken meatballs are done. Don’t overcook or they will get dry.
7. You may use Panko in place of regular meatballs. For keto, use almond meal in place of breadcrumbs in the recipe.
You may use ground beef or pork too in place of chicken.
