Air fryer Potato Pancakes | Potato Cakes

These air fryer potato pancakes or potato cakes are an excellent potato side that is so delicious. You can make these from leftover mashed potatoes as well. So good.

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 green onion sliced
  • OR
  • 2 cups potatoes boiled mashed
  • ½ cup grated cheese or vegan cheese
  • 1 tsp. Minced garlic or garlic powder
  • 1 tsp. Pepper
  • ½ tsp. Salt
  • 1 green onion sliced

For Breading

  • 1 cups breadcrumbs or Panko Or Use ½ cup flour and ½ cup breadcrumbs

Instructions

  • If using leftover mashed potatoes, chill before using so that they are cold and can be shaped into patties. Add sliced green onion to it. Then form potato patties.
  • For fresh potatoes:
  • Use boiled potatoes and mash them using a potato masher. Add grated cheese/vegan cheese, sliced green onion, salt and pepper and mix well to incorporate.
  • Using your hands form round patties or pancakes. You could also make balls if you like.

For breading

  • Now press the patties into breadcrumbs to cover all sides evenly. Repeat for all patties. Keep aside.
  • Put in the freezer for 10 minutes to hold shape.

Air fryer Instructions

  • Preheat air fryer at 390F or 200C for 5 minutes.
  • Lay mashed potato cakes in air fryer basket. Air fry at 390F or 200C for about 10 minutes till the outside is golden brown and crispy.
  • You may flip the patties midway. These potato pancakes are fluffy and soft inside while being crispy outside.

Baking Instructions:

  • Preheat oven at 380F or 160C. Place potato pancakes in a baking tray lined with parchment paper.
  • Bake for about 20-15 minutes till browned evenly on both sides. Do remember to flip the pancakes at 10 minutes.
  • Serve hot with sour cream/vegan sour cream or dip of choice. Your delicious mashed potato pancakes or cakes are ready to serve. Enjoy!

Notes

1. Always use chilled or cold mashed potatoes. This is a great recipe to use leftover mashed potatoes or mash some from scratch.
2. This recipe is already vegetarian. Use vegan cheese in place of regular cheese to make it vegan.
You can also add bacon bits to your mashed potatoes if you eat bacon and enjoy it.
3. In place of Panko or breadcrumbs, you could use ½ cup each of chickpea flour/all purpose flour and Panko.
4. Serve with sour cream/vegan sour cream or dip of choice.
