Ingredients

  • 16 square spring roll wrappers

Stuffing

  • 3 cups cabbage shredded
  • 1 cup carrot shredded or grated
  • 1 cups beetroot grated
  • 1 tsp. garlic minced
  • 1 onion small chopped
  • 2 tsp. soy sauce
  • 2 tsp. vegan oyster sauce
  • 2 tsp. chilli garlic sauce optional for more heat
  • 1.5 tsp. pepper freshly powdered
  • 2 tsp. olive oil

Instructions

To prepare the stuffing

  • Heat 2 tsp. oil in a pan. Add minced garlic and cook for 30 seconds.
  • Add chopped onion and saute for a couple of minutes to sweat it.
  • Add the shredded veggies like cabbage, carrot and beetroot and cook them on low heat for about 5-8 minutes till the moisture dries up.
  • Add soy sauce, vegan oyster sauce and chilli garlic sauce (optional) along with fresh pepper powder. Mix well and cook some more so that the flavours mix well.
  • Cool the stuffing so that you can handle it.

To prepare the spring rolls

  • Take each spring roll wrapper and spread it out. Spread some water on the ends to help with sealing.
  • Put a heaped tsp. of the stuffing in the center of the square sheet at a diagonal. Then start rolling it up. Tuck in the sides and seal at the bottom.
  • See the video for better understanding. It is okay if it does not look like a perfect roll. It tastes wonderful nonetheless.
  • Once you have prepared all the rolls set them aside.

Air frying

  • Preheat air fryer at 180C or 360F for 4 minutes.
  • Brush the basket with oil. Lay the spring rolls in one layer in the basket. Brush them with oil.
  • Air fry at 180C or 360F for about 5-6 minutes. No need to flip them midway.
  • They will turn golden brown and crispy.
  • Remove them and serve hot with the sweet chilli sauce or dip of your choice.
  • You can also deep fry the prepared spring rolls.

Notes

1. You can use pretty much anything for the stuffing. I have shared variations for stuffing above the stepwise pictures.
2. I have used store-bought frozen spring roll wrapper squares for this recipe that I thawed before using. You can make your own by making a stiff dough of all purpose flour, salt and warm water and roll it out into thin sheets.
3. You can use any sauces you like. I have used a combination of soy sauce, oyster sauce (for the umami flavour, use vegan sauce for vegetarians) and chilli garlic sauce. Use as per your taste. Only soy sauce and chilli sauce also work well.
4. It is very important that you sweat out the veggies well. If there is moisture in the stuffing then your spring rolls will end up being soggy instead of crispy.
5. Be careful with any added salt as soy sauce and other sauces used have their own salt content.
6. Feel free to use any veggies in your fridge. Finely chopped peppers are good too.
7. You can easily add crumbled tofu, cottage cheese or cooked shredded meat of choice.
8. You can also deep fry or shallow fry the spring rolls thus prepared.
9. You can prepare the spring rolls and refrigerate for upto 2 days. Take them out and air fry. If you are using frozen and thawed spring roll wrapper sheets then you can't refreeze them.
