Zucchini Fries in Air fryer

This air fryer zucchini is a delightfully delicious appetizer. Made with a crunchy coating this is a no-flour recipe. It is addictively tasty.

Ingredients

  • 2 zucchinis 1 lb. or about 450 gm. cut into batons or fries
  • 3 tbsp. Greek yogurt or plant-based yogurt

Instructions

  • Wash and dry the zucchinis. Choose tender ones. Cut off the edges on both sides.
  • Cut them into batons or fries of equal thickness (about 1 inch). See the video for a better understanding.
  • Take beaten or whipped Greek yogurt or plant-based yogurt (for dairy free) and dip all the batons to evenly coat. You could use Indian curd as well. Just make sure it is thick.
  • Take ground cornflakes (or breadcrumbs), grated cheese along with spices in a bowl and mix well. Take this in a shallow plate. Dunk yogurt-coated fries into the coating till they are well coated.
  • Preheat air fryer at 390F or 200C for 4 minutes.
  • Lightly spray or brush oil in the air fryer basket. Lay the coated zucchini fries in one layer in the basket.
  • Air fry for about 7-8 minutes at 200C till the coating is crunchy and the fries are done. Repeat with the other batches. I did 3 batches for 1 lb. of zucchini.
  • You could use perforated parchment paper in the air fryer basket for easier clean up. The fries don’t stick to the basket

Notes

1. Make the recipe dairy free by using plant-based yogurt and vegan cheese in the recipe. 2. The coating is super crunchy and deliciously cheesy. You can use breadcrumbs in place of cornflakes. 3. You could add flaxseed and sesame seed to the coating mix for more crunch and nutrition. 4. This recipe can be used with eggplant for making fries. 5. This recipe is zero oil and turns out wonderful. The yogurt provides the binding for the coating. 6. Grind the cornflakes to a fine powder before using for the coating. 7. You can add other spices or herbs like chopped parsley to the coating mix. 8. Serve with mayo, chipotle mayo, ketchup or mint chutney.
