Easy Veg Poha Recipe | Indian Breakfast

This a tasty, nutritious and quick to make Indian breakfast poha. Made with flattened rice, it can be ready in about 15 - 20 minutes. Great for lunchboxes too.

Ingredients

  • 1 cup poha or rice flakes
  • 1 onion finely chopped
  • 2-3 green chillies split into half
  • 1 boiled potato chopped into small pieces
  • 2 tbsp. peanuts
  • ½ cup peas fresh or frozen optional
  • ½ tsp. turmeric powder
  • 1 tsp. oil
  • 1 tsp. mustard seeds
  • 1 tsp. cumin seeds
  • 1 sprig curry leaves
  • salt to taste
  • Juice of 1 lemon
  • cilantro leaves to garnish
  • grated coconut to garnish optional

Instructions

  • Drain all water from the soaked poha and keep it in a colander for the remaining water to drain out.
  • Heat oil in a kadhai, add in the mustard seeds and cumin seeds along with peanuts.
  • Allow them to sputter.
  • Now tip in the slit green chillies and curry leaves and cook for a minute.
  • Tip in the chopped onion and cook till it is transparent.
  • Now add in the boiled potato and peas and cook a bit. Add salt, turmeric and drained poha (beaten rice) and mix well.
  • Cover and cook for about 4-5 minutes. Taste and adjust salt if necessary. Take it off the fire and pour lemon juice.
  • Garnish with cilantro leaves and fresh grated coconut (if using) and serve hot.

Notes

1.You can fry the peanuts separately in oil and then add to the poha while serving. That way they stay crunchier. 2. If you don't have boiled potato. Chop the potato fine. Microwave for about a minute and then add to oil with onion to cook. You can skip the microwave step and cook the potato separately with tempering. 3. You can use fine poha (rice flakes). Then, you don't need to soak it. Just take in a colander and pour some water on it to suitably prep it. You can also use red rice poha or rice flakes for more nutrition.
