Equipment

Ingredients

  • 4 medium potatoes 1 lb. Or about 500 gm.
  • 2 tsp. vegan butter or olive oil or butter
  • 2 tsp. extra virgin olive oil
  • 1 tbsp. minced garlic
  • 1 tsp. Pepper
  • ½ tsp. paprika
  • ¾ tsp. Salt
  • Chopped cilantro for garnishing optional

Instructions

  • Wash and dry each potato. I have used 4 medium potatoes here that are slightly more than 1 lb. In weight. Yukon gold work well.
  • Keeping each potato between two chopsticks, slice using a sharp knife such that the bottom stays intact. You can make the slices as thin or thick as you like.
  • Now microwave the potato for 4-5 minutes to cook it slightly. This reduces the air frying time. You can choose to air fry completely raw potato as well.
  • Take together vegan butter and olive oil. Add salt, pepper, paprika and minced garlic to it and mix well.
  • Brush your sliced potatoes with this mixture ensuring that every slice is coated well.
  • Some of it will slide down and that’s fine. You can reuse that.

Air frying Instructions

  • Preheat air fryer at 360F or 180C for 5 minutes. Place the potatoes using tongs in air fryer basket.
  • Air fry for 10-15 minutes at 360F or 180C till your potatoes are nice and done. You can use a knife to poke and see if the potato seems done.
  • If you have not microwaved your potato, you will take about 25 minutes air frying time depending upon the size of your potatoes.

Oven Instructions

  • Preheat oven to 400F. Lay the potatoes on a baking sheet in a baking tray. Bake for about 40-50 minutes till golden brown and cooked. You can cook larger batches in the oven if you so desire.
  • Brush once more with the spiced butter mix when taken out to enhance the taste of the seasonings.
  • Garnish with chopped parsley or cilantro leaves (optional) and serve hot with a dip of choice.

Notes

You can use any firm potatoes that you like. Yukon gold works well and so does russet. I like the regular brown skin ones as well.
I cook the potatoes to parboil after slicing them in my microwave for about 5 minutes. That really cuts down on the cooking time in the air fryer. But you can do them from raw too.
You can use any chopped herbs that you like either while brushing the potatoes or to garnish like chopped parsley, cilantro or thyme.
A combination of vegan butter and olive oil gives them a delicious buttery flavour. Just extra virgin olive oil also tastes delicious.
Make sure that you brush in each slice to ensure that the entire potato soaks in the seasoning.
The larger your potatoes, the more time they will take to air fry.
