Tom Kha Thai Coconut Soup

1. Heat 2 tsp. coconut oil. Add 1/2 chopped onion and 3 cloves garlic smashed. Fry for 4 minutes.

2. Add paste or chopped 2 lemongrass stalks, kaffir lime leaves and galangal. Fry some more.

3. Add 2 cups chopped vegetables and 2 cups broth or water. Cook covered till vegetables are tender.

4. Add 1 cup chopped mushrooms, 3 chopped Thai chillies, 1 tsp. palm sugar and 400 ml. or 14 oz. coconut milk.

5. Cook for 2 minutes. Finally add oyster sauce and lemon juice. Turn off heat. Serve hot with chopped cilantro garnish.

6. Delicious Tom Kha soup is ready. Make it vegetarian, vegan or meat based by adding protein of choice.
