Easy Stuffed Zucchini Boats

1. Take each zucchini. Cut into halves and scoop out the flesh to form a large cavity or boat. Each zucchini gives 4 such boats.

2. Heat 2 tsp. oil in a pan. Add 1 chopped onion, ginger and garlic. Saute for 3 minutes till browned. Add chopped or minced chicken/beef/tofu/paneer. Add marinara sauce or Harissa & Sriracha sauce.

3. Preheat air fryer at 160C for 5 minutes. Place zucchini boats after applying salt, pepper & oil. Air fryer 5 minutes at 180C. In case using an oven, skip this step.

4. Add the cooled stuffing generously inside zucchini boats. Add the sauce from the pan too. Use marinara sauce or any sauce of choice.

5. Top with grated parmesan and mozzarella or any other cheese of choice. If vegan, use vegan cheese.

6. Air fry at 200C or 390F for 6 minutes till the cheese browns. Serve hot. For oven, bake at 400F for about 25-30 minutes till cooked.

7. Zucchini boats are done. Serve them hot with more marinara sauce or just a dip of choice. Enjoy!
