Raw Carrot Salad

1. Peel and grate or julienne carrots. Chop green chilli, cilantro. Assemble roasted peanuts, lemon juice, oil and seasonings.

2. Take a large bowl. Mix together grated carrot, chopped cilantro, chilli (optional) and roasted peanuts.

3. Mix them well. Add salt and pepper. Mix again. Now add lemon juice and mix.

4. Heat 2 tsp. olive oil in a pan. Add mustard seeds and allow them to sputter. Add curry leaves and turn off gas.

5. Pour this tempering on top of the salad and mix well. Your raw carrot salad is ready.

6. If you leave it for 1 hour in the fridge, it tastes even better. Else serve your raw carrot salad right away.
